Kale Salad
Now we all know kale’s reputation as a super food. There are so many health benefits from incorporating it into your diet that you’re going to want to try it, if you haven’t already. To further convince you, here are a few reasons why kale is so great:
Low in calories, high in fiber, and has zero fat.
High in iron.
Rich in antioxidants.
Kale is a great anti-inflammatory as well as detox food.
High in Vitamins K, C, and A.

For Salad and Dressing
8 cups de–stemmed, chopped kale
2 large garlic cloves
1/4 c lemon juice
4 T extra virgin olive oil
1/4 t salt
1/4 t pepper
1–2 handfuls of dried cranberries for garnish
For Pecan Parmesan
1 c pecans, toasted
1.5 T nutritional yeast
2 pinches of salt
Directions:
Preheat oven to 300ºF. Spread pecans on a baking sheet. Toast in the oven for about 8 minutes.
Wash and dry kale, remove stems. Chop and set aside in a bowl.
For the dressing, blend garlic in food processor until minced. Add lemon juice, oil, salt, pepper, and process until combined. Adjust to taste if desired. Pour dressing over kale. Massage kale until evenly coated.
For the pecan parmesan. Blend pecans into small bits in food processor. Then, add nutritional yeast and salt. Process again until it's a coarse crumb.
Sprinkle mixture over salad. Garnish with cranberries. Enjoy immediately or wrap and let sit in fridge for a half hour. Best served the day of.
