Pumpkin Protein Energy Bites

This is a great recipe to make over the weekend for the week ahead. You'll be glad to have these energy bites easily accessible in the fridge as a pre- or post-workout bite, middle of the afternoon snack, or dessert.


Ingredients

1/4 c pumpkin puree

1/2 c nut butter (I used 1/4 c almond butter and 1/4 c sunflower seed butter)

1 tsp avocado oil

1 .5 Tbsp maple syrup

1/4 tsp vanilla extract

1/2 c gluten free oats

1 scoop pea protein powder (or protein powder of choice)

1 tsp cinnamon

1/2 tsp ground ginger

(optional) dash of fine sea salt


Directions

  1. Add all wet ingredients to a mixing bowl and stir to combine.

  2. Add dry ingredients to wet ingredient mixture.

  3. Let sit for 2 minutes, then form into balls and store in the fridge for up to a week.
