Preheat the oven to 375 deg F.
Make the sauce by heating oil in a pan and saute garlic and onion until tender. Then, add salt, pepper, and tomato sauce. Finally, after simmering for a couple minutes, remove from heat and stir in basil.
Grab a 10-12in oven-safe baking dish.
Pour sauce into the dish and begin to arrange vegetables on top of sauce in an alternating pattern.
Combine herb seasoning ingredients and spread over vegetables.
Cover with foil and bake for 35minutes, then remove foil and bake for about 20 more minutes.
Remove from the oven and serve hot.
*If you do not have time to make the sauce, grab a jar of organic marinara as a substitute!
