Soft and Fluffy Pumpkin Cookies
It's that time of year when everyone falls in love... with pumpkin! As a big fan of seasonal produce, I look forward to fall, especially for this item. Ingredients
Bowl 1
1 1/2 c almond flour
2 T coconut flour or GF flour blend
1/4 tsp baking soda
1/4 tsp salt
1 tsp pumpkin pie spice or cinnamon
(optional) chocolate chips
Bowl 2
2 T butter, melted and cooled
1/4 c maple syrup
1 T brown sugar
1 egg, room temp
1/3 c pumpkin puree
1 tsp vanilla
(optional) coconut sugar and cinnamon in which to roll dough before baking
Directions
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Mix together group 2 ingredients.
Combine dry ingredients plus chocolate chips as desired and add to wet mixture, mixing until just combined. Let sit for 5 minutes.
Form dough into 12 golf ball-sized, roll in sugar/cinnamon mix if desired, and flatten slightly with hands.
Bake for 10 minutes. Remove from oven and let cool on a wire rack.
